Garden Delights!

( yes I said cakelet)

We have had many birthday celebrations around here and it has been so fun! Gracie wanted a sandcastle cake for her party and it turned out really cute! when I load up picts I will share but it had lots of cookie sand, white chocolate sea shells and ice cream cones for towers! She also wanted to take some of these veggie cakelets to another little party ( she has had a few!!) and I had to share because I LOVE lOVE lOVE this pan!!! They are so delightful and perfect for spring and summer parties! You could make them out of zucchini cake to boot! I added crushed oreos for dirt and they were so fun!!! ( no mine did not look THIS great but they still passed- just no picts :)

Here is a recipe from all recipes that looks pretty good! I added some side notes to make it healthier ( of course) but still rather yummy!

Ingredients

  • 3 cups all-purpose flour ( can also use wonder flour mix)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 2 cups white sugar ( or agave)
  • 3 teaspoons vanilla extract
  • 1 cup vegetable oil ( or applesauce)
  • 3 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift together flour, salt, soda, cinnamon, baking powder.
  3. Beat eggs. Add and mix well sugar, vanilla, and oil. Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into 2 ungreased loaf pans.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour.
I have also tried some with added lemon zest and it is equally fabulous ! I am sure there is no shortage of zucchini out there!
